Chevron ( goat meat ) has less fat more protien and more iron then chicken!
Beef has double the calories and an astonishing 8 times the fat for the same amount of protien!
 
Chevron is a dark red meat, very tender, flavourful and makes up 63% of the red meat eaten in the world! Try some and you'll see why.
 
Curried Chevron
 
1 lb Chevron
salt to taste
3 oz butter
2 Tbsp. minced onion
2 Tbsp. finely cut celery
2 Tbsp. diced apple
1 Tbsp. flour ( use spelt or rice flour if desired )
1 Tbsp. curry powder
1 can stewed tomatoes
1 1/2 cup of water
 
Cut meat into 1 inch squares; salt meat and saute in butter. Add onion and apples; saute thoroughly. Sprinkle mixture with flour and curry powder and cook until flour colours. Add tomatoes and water, cover sauce pan and let simmer until done. Serve on a bed of steamed rice.
 
 
Braised Chevron Ribs
 
2 lbs Prime Chevron ribs        
1 1/2 tbsp minced garlic
2  tbsp minced ginger
1 large chopped onion
1/2 dried chile pepper, crushed OR 1 fresh minced chile
8 cloves crushed
grated zest on 1 orange
juice of 1 orange ( remember the one you took the rind from?)
1/4 cup sodium reduced soy sauce
1/3 cup hoisin sauce
1/3 cup honey
juice of 1/2 lime
2/4 cup dry sherry
 
Add garlic, ginger, onion, chili, cloves,orange zest, orange juice, soy sauce, hoisin sauce, honey, lime juice, and sherry to a resealable plastic bag or bowl. Mix well.  Add ribs and turn un til completely coated. Transfer to fridge and marinate overnight.. Preheat oven to 350 f. Add ribs and marinade to a shallow roasting pan. Add enough water to just cover. Cover with aluminum foil and transfer to the oven. Braise until the ribs start to get a little tender, about 2 - 2 1/2 hours, turning often to ensure even cooking. Remove foil and cook for an additional 30 minutes until the ribs are tender and most of the fluid has evaporated.
